Today is my daughter @lauramancey17 Birthday 🎂🍹🎉🎊 . She may be cracking on at 26 😂😂 but she still wants a cake . Maybe it's all the years of me not being able to bake she's always now ready for her own cake . So Giraffes it is ( her favourite) ..... im no fondant expert but I do try !! . But making sure we can all eat it for dietary requirements is why I started this baking madness 😂😂 and the most important factor .... looking passable is a bonus . So of course its Gluten Free and Dairy Free to cover us both and eggs removed because well...... I can 😂😂😂 and because #everyoneshouldenjoycake . The cake itself is my take on @stylesweetdaily Eggless Chocolate Cake from her The Layered Cake book , Modified to Gluten Free and this time a heavy dose of black cocoa was used . . Apple Crumble...... Nothing more speaks of Autumn.... . Gluten free, Nut Free, Dairy Free and Vegan . With Lashings and Lashings of Gluten Vegan Custard . A little recipe here for the taking , you could be having this for tea tonight 😍😍 . Feeds 4 or One if you want 😂😂😂 . Ingredients . 1kg Bramley apples . 1 tbsp caster/ superfine Sugar . 2 tsp of cinnamon . 1 tbsp water or apple juice . 100g Gluten Free plain flour . 75g Vegan Butter , I used Pure ( uk ) Earth Balance will work . 50g Gluten Free rolled oats . 100g demerara sugar . 1 tsp of cinnamon . . . Method . Preheat the oven to 200C/400F . Wipe the apples and cut them into quarters, then remove the cores and slice each piece in two. Put them into a pan, sprinkle on the caster sugar and cinnamon. Add a tablespoon of water or apple juice and cook over a medium heat for about five minutes, until the apples start to soften. . Transfer the apple mixture to a shallow ovenproof pie dish. . Blend the flour and butter in a food processor for a few seconds, until the mixture looks like breadcrumbs. Or rub in with fingers tips . Stir in the oats Cinnamon and the brown sugar and sprinkle over the cooked apples in the pie dish.
