Gluten Free ,Vegan ,Nut and Coconut Free

Things just happen in The Cauldron when I least expect !!

And this is just one of those times !!! Purple Cookies indeed you say , what on earth is she doing

Well Insta made me do it 😂😂, well a group of bakers that are collaborating together on colour and today is Purple Day !!

I had to get my thinking hat on and then remembered in My baking Group Melissa has made some amazing bakes using a non standard Uk ingredient , UBE !!

So with that because I had no chance of getting ube or Purple Yams in North Yorkshire 🤣🤣🤣. I headed to Amazon to purchase what I needed ( If you have a good Thai or Asian Supermarket near you you will strike lucky )

These are what I came up with and used for the recipe

Now what does it taste like, you may ask !!

Well they say its a mellow Vanilla, Woody Flavour, but I cant taste woody or earth I just taste a mellow and soft vanilla.

So its all good , dont get scared Even though these cookies are perfect for Halloween 😝😝

Crisp on the outside and soft in the middle, they are perfect in every way

Time to get your bake on the kids will love these as well as the adults !!

Ube Crinkle Cookies GF, DF V

All the hallmarks of a crinkle cookie but with a unique twist and beautiful colour too


Cookies are 3 1/2 in in diameter , can be made smaller , but baking time will need to be adjusted down a few minutes
Most baking recipes instruct you to sift the icing sugar before using in the recipe. Icing sugar sugar tends to clump when stored,
However, you don’t need to sift the confectioners’ sugar for these ube crinkle cookies. I find that the lumps in the confectioners’ sugar help coat the cookies better and you need to be generous and not have any bald patches !!

Ingredients

  • 200 g Gluten Free Plain Flour Blend ( I recommend Dove Farms Free Plain UK or Pillsbury US )
  • 1/2 tsp Xanthan Gum ( Omit if your blend contains it )
  • 1 tsp Baking Powder
  • 190 g Granulated White Sugar
  • 110 g Unsalted Dairy Free Block Butter ( Iused Flora Plant Based )
  • 110 g Ube Jam
  • 25 g Chickpea ( Besan ) Flour
  • 35 ml Water
  • 1 tsp Ube Extract
  • !/2 tsp Vanilla Extract
  • 120 g Icing / Confectioners Sugar

Directions

  1. Preheat the oven to 175℃ / 350°F. ( Convection not recommended )
  2. Line two baking sheet pans with parchment paper.
  3. In a medium bowl add the Flour, xanthan ( If using ) and Baking Powder and whisk until combined
  4. In the bowl of a stand mixer fitted with the paddle attachment, combine the sugar and butter. Beat on medium-high until light, fluffy,about 5 minutes.
  5. Mix the Chickpea Flour and the water together and mix until smooth
  6. Reduce the mixer to low and add to the sugar butter mix beat until just combined. Use a rubber spatula to scrape down the bottom and sides of the bowl.
  7. Mix the ube jam , vanilla and purple coloring in a small bowl until smooth
  8. Add the purple stuff to the mixture in the stand mixer and on low beating until combined and completely purple, 1 to 2 minutes.
  9. Gradually add the dry ingredients and beat until just combined. Scrape down the bottom and sides of the bowl once more, and beat on low for an additional 30 seconds.
  10. Add UNSIFTED Icing sugar to a medium bowl
  11. Use a 3-Tablespoon cookie dough scoop to portion the cookie dough , 60 g each into balls, drop into the bowl with confectioners’ sugar. Toss until the cookie dough balls are completely and generously coated.
  12. Place the cookie dough balls at least 3 inches apart on the prepared sheet pans. you amy need to bake in a few batches
  13. Bake the cookies. Bake one pan at a time 15 minutes, or until the edges have set but the centres are still soft.
  14. Serve and store. Serve warm, or at room temperature. The cookies can be stored in an airtight container at room temperature for up to 5 days.
  15. Enjoy

So if you want to try something a little different to the usual, this one is certainly for you !!

You need the purple food colouring as it a trick !! 😎 Ube will actually bake brown otherwise and well we where not about this life on these cookies 🤣🤣

I love them and they went down well at home to ( Which is always a bonus

A no chill recipe and they are my favourite ….life is to short

But if you find your dough to sticky just pop it in the fridge for 30 minutes ( Ive not had to do this but I am in the UK 😂)

I love it when a bake comes together and surprises with fabulous results and thsi is one of those times !!
