Alright Alright when is a Muffin a Cupcake ? ππ
I’m telling you in intolerance baking it does not equate…. it doesn’t. π
Apparently it goes on creaming sugar and butter together for cupcakes and oil for muffins…… well my cupcakes have oil in them…….look at my Vanilla, Funfetti and Chocolate
Apparently muffins are healthy π these are most certainly not
and finally you can eat a muffin hot or cold……..try it with these think you could end up with a hot mess πππ
Just a few of the reasons you need to back away from the debate, I’m not playing these are MY Banana Bread Cupcakes, and they are stopping there
Oh and they are cooked in Cupcake liners so by default I rest my case
This bake was not a planned blog post, it developed due to a request for some ‘ Jungle Cupcakes ‘ for The Awesome Wellbeing lounge
So Bananas, Monkeys, Jungle…..you got my thought process….very simple π
However what a nightmare…..I thought it would be simple, it wasn’t !!!!
I made my first batch , not bad but not flat, I tried at least 4 other way to get the lovely flat surface, other recipes altered and manipulated with my standard methods and the results where just …..worse, soggy wet and well I wouldn’t feed a dog it
So I’ve stuck to my original, and I can tell you, i would rather have taste and texture than that so called beautiful top
The reason, you’re dealing with an inconsistent medium……banana
I’ve looked at other blog post on banana cupcakes and funnily enough not one I found actually shows you a naked cupcake…….I wonder why ( All right i may be a tad cynical π) but well I’m suspicious ππ
Oh and this frosting is AMAZING…… no coconut cream or milk, and as thick and lush as you can imagine……I dare you to not eat it all with a spoon
( I will do a separate blog post on this eventually so you will have it straight to hand, but to be honest I’ve had a year not making many chocolate items, but we are going into Autumn and winter so that will change )

Right lets crack on……….CUPCAKES

Banana Bread Cupcakes With Chocolate Ermine Frosting
A classic combination of banana cupcakes and rich chocolate, in a cupcake GF, DF V
Cupcakes are beat served at room temperature, will be fine stored in an air tight container on the counter for 3 days If refrigerating please take on for at least an hour before serving
********The Ermine Pudding base will need to be made in advance***********
Ingredients
- 200 ml Dairy free milk ( I used Soya )
- 2 tsp Apple Cider Vinegar
- 90 ml Oil of choice ( sunflower oil or rapeseed are my first choices )
- 75 g Granulated Sugar
- 75 g Light Brown Sugar
- 1 1/2 teaspoons Vanilla Extract
- 180 g Gluten Free Flour ( Dove Farms UK or Pilsbury US Cup for Cup )
- 1/4 tsp Baking soda
- 1/4 tsp Xanthan gum ( omit if your blend contains it )
- 1 1/2 tsp of Baking powder
- 1 1/2 tsp Cinnamon
- 3 medium bananas
- 45 g Gluten free Flour blend as used for your cake
- 30 g of Cocao or Cocoa Powder
- 150 g Granulated sugar
- 250 g Dairy free Milk, I advise Rice milk always but that’s up to you
- 100 g Vegan Butter, I use Pure Dairy Free or Stork Block depending on what I have in . Earth Balance will be the US alternative
- 90 g Shortening, I use Trex, Hi Ratio is the best US wise.
- 100 g GF V chocolate ( issued Sainsbury own brand on this ) You can use full Non dairy butter but you would need to stabilised it with xanthan gum and that can cause splitting, feel free to try, it needs to be added at the end of the process and whisked in thoroughly 200g of Non dairy in total
For the Ermine Frosting
Directions
- To Make the Ermine Pudding base
- Combine the flour, sugar, milk and cocoa in a pan and whisk until combined
- On a low heat, dont rush it it will scorch, and whisking continually bring the pudding to a boil
- Once boiling using a spatula continue to stir the pudding round the sides and the bottom using a folding motion.
- Once the pudding starts to freely come away from the sides, about 2 minutes, transfer to a plate and cover clingfilm to prevent a skin and leave to cool at room temperature
- You can sieve onto a plate if you want to remove or feel you have any lumps, but this needs to be done quickly . . .
- Preheat oven to 160 C convection/ 180 C standard /350 F
- Line a 12 hole baking tin with cupcake liners
- Add the Apple Cider Vinegar to the dairy free milk and set aside for 5 minutes to turn into dairy free buttermilk
- Blend the bananas in a blender or mash with a fork in a bowl ( blender leads to a smoother cupcake )
- Combine the flour, bicarb, xanthan ( if using), cinnamon and baking powder into a large bowl with a whisk
- Sift the dry ingredients into a bowl
- Tip the banana mush, two sugars, milk concoction , vanilla and oil and into a mixing bowl and whisk until combined
- Add the wet ingredients above to the flour mix element and fold them together with a spatula until just combined
- Using a cookie scoop or spoon, fill the liners 2/3 full equally
- Place in the oven for 20 minutes until cooked, they should spring back to touch or if using a cocktail stick it should come out clean, from the centre
- Leave in the tin for 5 minutes, then transfer onto a wire rack to cool
- Whisk the fats in a mixer with a paddle attachment or with an electric hand mixer until fully combined and fluffy about 3 minutes
- Melt the chocolate in a small bowl in the microwave in ten second bursts until melted and smooth. Leave to cool whilst doing next step ( can be done on hob over a pan of simmering water in a double pan )
- Add the cooled pudding a tablespoon at a time making sure its combined before adding another
- Continue to mix until all the pudding is added mix on high for 3 minutes
- Add the melted chocolate to the frosting and mix on high for 3 minutes until combined and light and airy
- Decorate cupcakes as desired
- Enjoy
