Up to a couple of years ago I didn’t even know baked donuts where possible…..I’m not even getting into the Donut /Doughnut Debate. Reason, its easier to type donut and to be honest I dont careπππ
So is you are going to pull me up for grammar and spelling step away from the post ππππ
So here we are making donuts and you’ve no pan, especially if in you are in the UK , yes you can get one, but you can do donuts holes whilst you await your amazon delivery to appear. Hence why I’ve put to bakes on one post. Don’t want you having excuses not to try

Donuts are best on the day of making, however the holes or cinnamom covered ones can be zap the next day to freshen up, but you wont have any left, my money is on it π
Right now to talk Nutmeg againπππ I cant bang on enough about throwing the commercially ground away and buying meg. I little arm work out never hurt anyone but the flavour is a world away from the powdered variety, please grate it on a micro grater and watch your fingers ,that mate told me again, shes very accident prone πππ
These are a healthier alternative, nowhere am I saying these are fried donuts nor am I claiming it, but the taste makes a memorable donut and my preference to the grease laden ones

The Intolerance Donuts and Holes GF, DF V
Easy Way to achieve a healthier and fun guilty pleasure , the childhood treat
Ingredients
- 130g Plain Gluten Free Flour Blend ( I recommend Pilsbury Cup for Cup US or Dove Farm UK)
- 1 tsp Baking Powder
- 1/4 tsp Xanthan Gum ( omit if your flour blend has it in )
- 60g Dairy Free Yogurt ( I use Alpro and for these I used the Go On variety as it was what I had in )
- 60g Dairy Free Milk ( I Used Alpro Soya )
- 50g Coconut Sugar or Light Brown Soft Sugar
- 60ml Oil ( I find Sunflower best but any neutral oil)
- 20g of Vegan Butter ( I used Pure UK but Earth Balance US )
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1/2 tsp Fresh Ground Nutmeg
- 3 tbsp Aquafaba ( chickpea juice out of the can ) Chocolate Glaze
- 100g Vegan GF Chocolate
- 20g Vegan butter
- 2 tsp Agave Syrup, Golden syrup or Light Corn Syrup
- 2 Tbsps Water
- Sprinkles if you want Cinnamon Sugar Glaze ( double for just donuts )
- 100g Granulated Sugar
- 1tsp Cinnamon
- 25g Vegan Butter
Directions
- Preheat Oven to 160 Convection / 177 Standard / 350 F
- Greasy your Donut Tin Well, I used Wilton Pan release but you can use vegan butter or oil
- Mix together the Flour, Xanthan Gum, Baking Powder and spices with a whisk and then sieve to aerate
- Measure the milk and warm in the microwave for 30 seconds ( can be done over a pan of simmering water )
- Melt the butter for 10 seconds is the microwave ( can be done over a pan of simmering water)
- Add the sugar, yogurt, aquafaba, ,milk butter and Vanilla to a bowl and whisk until smooth
- Now add the wet ingredients to the dry and whisk until smooth ( you cant over mix you’ve no gluten but calm your passion no need to go to mad π)
- Place in a piping bag or freezer bag as shown below and pipe into the tins, its the easiest way I’ve found. cut the ens the size of the diameter of the donut size
- Once piped dampen the join or the top of the donut hole with a wet finger just to smooth
- place in the oven for 9 minutes, same for donuts as holes
- Leave to cool
- Melt the chocolate and the Vegan Butter in a microwave in 10 second bursts until melted in a small bowl
- Add the water and stir in, its fine I find its better this way as you can add more if need depending on the brand used
- Dip Donuts, see Pictures below I prefer this method, it gives a cleaner finish and a cleaner kitchenππ
- Add sprinkles after a few minutes when chocolate has settles so they don’t slide off
- Leave to set , enjoy
- Mix the sugar and Cinnamon on a baking tray with parchment on
- Melt the Vegan butter
- Toss the Donuts or Holes in the Butter and then into the sugar, I just leave them on the tray to set up
- Enjoy

So there you go, all done. For those of you with Children I apologise for the mess, but they will have the time of their lives……… honest. Probably due to the sugar rush.
As you can see I used coconut sugar in mine, I find it gives a better texture for me. Ooooo crumbporn best show you……excuse fingers ππ
